Quinoa is an healthy grain mainly due to its high protein and fiber content. We all love quinoa in our household and usually buy it from here . I will always be in the look out of how to make our traditional recipes more healthier. Usually when I make upma , I use cracked wheat instead of sooji ,since it is a more healthier version. Then I tried Quinoa, but my husband and kids didn’t like it. So I mixed cracked wheat and quinoa but it took a lot of time to cook in the traditional pan method. As soon as my Instant Pot arrived, I wanted to try it .For people who dont know what an Instant pot is , it is an electric pressure cooker . You can make anything that you make on a normal pressure cooker but no baby sitting on number of whistles. Ingredients :
Cracked wheat -1 cup
Quinoa – 1 cup
Onions – 2
Carrot -1 cup
Beans – 1 cup
For tadka : Mustard, urad dhall, channa dhall, hing, chillie, ginger ,curry leaves.
First set IP to saute mode
Then add oil and when oil is heated add all the ingredients under tadka , once mustard splutters add hing and then chopped onions
Add some salt at this stage and let onions become translucent. Then add chopped carrots and beans.
Let carrots and onions fry a little then add 2 cups of water. Then add quinoa and cracked wheat to it. Make sure the water you add is just enough to soak all the ingredients like the pic below
Now cancel saute mode and then change IP to Low pressure 15 minutes
Then do natural release and you should see the upma like this
